This light, herbaceous green tea cocktail makes the best kind of afternoon tea. It is from the sweet soils of Lummi Island and master makers of Willows Inn, where, before dinner, the grounds are like a dinner theater. Chefs are foraging herbs, smoking mushrooms, grilling fish in preparation for dinner. You can watch it all happen as the sun goes down over the bay.
1.5 ounces green tea infused gin*
.5 ounces lillet
.5 ounces honey water*
.5 ounces lemon juice
garnish with a fresh leaf of sweet woodruff
*Im not sure how Willows Inn infuses their gin or makes their honey water, these are my recipes for each:
Tea infused spirits: Add 2-3 teaspoons of (I would use Chinese green tea for this recipe) tea to 1 cup of spirits. Steep for 3-4 hours and strain.
Honey water: Dissolve honey into an equal part of water and stir to combine.
