I converted this recipe from one I found in a 1950’s Finnish newspaper clipping in my grandmothers kitchen. It is simple to make, tastes simple and wholesome and you can use any fruit. Serve it with Russian style black tea with strawberry jam.. recipe coming soon!

You will need:
a 12 inch square pan or similar
1 cup salted butter at room temperature (grass fed, cultured butter really does make a difference but any butter works!)
1 cup sugar
2 teaspoons vanilla extract (or 1 Tablespoon vanilla sugar if you can find time)
1 and 2/3 cups all-purpose flour
1 teaspoon baking powder
2 teaspoons ground cardamom (freshly ground if possible)
1 pound of rhubarb, peeled and chopped into 1-2 inch pieces
2 green apples, peeled and chopped into 1-2 inch pieces
Prepare a 12 inch square pan or similar with butter and flour (I like to use farina instead of flour).
Cream together butter and sugar
Add one egg at a time, beating thoroughly after each addition
Sift together flour, baking powder and cardamom together and then stir lightly into butter and egg mixture
Add the fruit to the batter and spoon it all into your pan
Bake at 350 degrees for 50-60 minutes
